How to Prepare Homemade Peanut Jaggery Bars or Peanut Chikki 

Peanut Jaggery bars are an all-time favourite snack for many people. Irrespective of age, all enjoy its burst of energy and its an instant solution for hunger while travelling. As lockdown is on its progress, sometimes we miss that crunchy bites. Let us see how to make it at home, all you need is to store some raw or roasted peanuts.

Ingredients
  • 2 cups peanuts
  • 2 cups + 2 tablespoons powdered jaggery
  • 1 teaspoon ghee

Instructions

  1. Grease a rectangle or square tray with ghee. With this, you can make perfect square-shaped bars. (I used a round pan, as I didn’t have a square one.)
  2. Heat a deep bottomed pan. Add peanuts. Saute on a low fire, stirring continuously, until peanuts become crispy. This may take about 5 to 6 minutes. Transfer them to a plate. Set aside to cool.
  3. Once the peanuts are completely cool, rub them between your palms to remove the skin. Do this little by little. Break each peanut in half, and remove the small part inside the halves. Discard these, as they are bitter. Don’t worry if a few are left. They won’t spoil the taste.
  4. Heat the same deep-bottomed pan. Add jaggery powder and 2 tablespoons of water. Stir and boil the mix on low fire until the mixture froths. Continue boiling until this jaggery syrup reaches two-string consistency. To test this, either you can drop a little syrup and see whether it falls like two strings at the end, or you can drop some syrup into the water and see whether you can gather it and form a ball. This is the right consistency for making the bars.
  5. Now, add peanuts. Mix them with the syrup. Boil the mix for 1 minute. Turn off the stove. Pour the mix into the greased tray. The thickness of the slab should be about 1/3 inch. Gently tap the sides to ensure that the mix spreads evenly. Put the tray aside and let it set.
  6. After 5 minutes, when the mix is still hot, draw out the squares with the help of a greased knife tip. Don’t insert the knife too deep into the bar.
  7. After another 5 to 8 minutes, insert the knife tip exactly on the earlier lines, deep inside, and cut the pieces. Take them out one by one once you can move them from the base.
  8. These bars become super crunchy once they are completely cold. So, now your scrumptious peanut chikki is ready to serve. Munch them whenever you desire. Enjoy eating these yummy bars.
