1 medium onion
1 tbsp crushed ginger
1 tbsp garlic
1 sprig curry leaves
¼ tsp turmeric powder
2 tsp chilli powder
½ tsp garam masala
1 tbsp coriander powder
2 tbsp coconut oil
¼ tsp mustard seeds
Salt as required
Mustard seeds, sputter
Stir in the curry leaves and ginger-garlic paste.
Sauté for a few minutes, then add the onion and some salt. Sauté well, then add the turmeric powder, chilli powder, coriander powder, and garam masala.
Sauté on low heat until the raw smell of the powders disappears.
Sauté the tomato until it becomes mushy.
Add the potato cubes.
Pour in enough water and pressure cook until two whistles sound.
Garnish with coriander leaves, if desired.
This potato curry is delicious with appam, chapthi, or roti.
