In a grinder take ¼ cup coconut, ¼ teaspoon cumin seeds, ½ teaspoon mustard seeds and 1 green chili and add 2 to 3 tablespoons water and grind smooth.
Rinse, peel and chop 1 ash gourd . You will need 1 cup of chopped ash gourd. Add the ash gourd in a pan with ¼ cup water.
Cook the ash gourd for 5 to 6 minutes
Next add the ground coconut paste. Add salt as per taste and mix well and cook for 2 to 3 minutes on a low flame.
Beat 1 cup curd until smooth. Mix it with coconut mixture after it has cooled down .
Heat ½ tablespoon coconut oil in a pan and add ¼ teaspoon mustard seeds. After it crackle add 1 dry red chili and 5 to 6 curry leaves. After 2 to 3 minutes pour it in the pachadi mixture and mix well.
