Tasty stuffed brinjal recipe

Stuffed brinjal is a vegetarians go to recipe. It is a spicy and extremely delicious recipe,  You can eat it with chappati, paratha, rice,  naan, biryani etc. So here we have a recipe how to make stuffed brinjal.

Ingredients

Brinjal 250-300 g
Cumin seeds 1 tsp
Fennel 1 tsp
onion seed 1/4 tsp
Fenugreek seeds 1/2 tsp
Rye/Saina Mustard 1/4 tsp
Turmeric powder 1/2 tsp
Red chilli powder 1 tsp
Coriander powder 11/2 tbsp
Garam Masala 1/2 tsp
Gooseberry powder 11/2 tsp
Salt 11/4 tsp
Oil 5 tbsp

Preparation

Wash the brinjal and make a cut. Make sure that the stalk does not break.

Heat a pan on a medium flame. Put cumin seeds, fennel, onion seeds, rye/mustard seeds. Add mustard, and fenugreek and fry on a low flame until it smells good.

Next turn off the heat and let the spices cool.

Grind these spices in a mixer . Take turmeric, coriander powder, ground red chillies, garam masala, gooseberry powder, and salt . Add a teaspoon of oil or a little water to this ingredient and mix all the spices well.

Open the brinjal lightly and fill the brinjal with spices.

Heat 4 teaspoons of oil in a pan. Fry the seasoning brinjal in hot oil for one to two minutes, now cover and cook on medium to low flame till the brinjal melts.

After 15-20 minutes  remove the lid and fry the brinjal on medium heat with a light hand for a minute and then turn off the heat.
