Delicious Mangalore Bajji with evening tea!

Mangalore Bajji is a savoury evening snack in Mangalore of Karnataka . These deep-fried Maida balls that have a spongy texture inside and are crispy outside. These are prepared using all-purpose flour or Maida, curd and very few spices.

Ingredients

Maida -1 cup
Curd – ½ cup
Baking soda – ¼ tsp
Hing/asafoetida – ¼ tsp
Salt to taste
Curry leaves – finely chopped
Green chilli – 1, finely chopped
Ginger – ½ inch, finely chopped
Pepper – ½ tsp
Cumin seeds – ½ tsp
Oil – for frying

Preparation
Take a mixing bowl and add maida and curd or buttermilk. Now add chopped curry leaves, green chillies, ginger, jeera and pepper. Now add baking soda, and salt and mix it well. Now, beat the batter well. Keep it aside for one hour.
Now dip the hand in cold water and take a small ball sized batter and drop it in hot oil. Fry the ball in medium flame. Stir it properly. Drain off the oil once it turns golden brown and crisp. Mangalore Baje can serve hot with coconut chutney.
