Here are some diabetes-friendly dinner recipes that are not only delicious but also nutritious:

Mexican Vegetable Salad


2 tbsp extra virgin olive oil

Fresh coriander, roughly chopped

2 cloves minced garlic

2 tsp oregano

3 tbsp lemon juice

3/4th tsp cumin powder

1/4th tsp chili flakes

200 gm lettuce

3/4 tomatoes

1/4 cup corn

1/2 cup boiled kidney beans

2 small-sized bell peppers


Whisk together olive oil, coriander, garlic, oregano, lemon juice, cumin powder, and chili flakes in a glass.

Chop lettuce, tomatoes, bell peppers, corn, and boiled kidney beans. Toss them with the dressing.

Serve the delicious Mexican Salad.


Stir Fry Tofu


  • 2 tbsp olive oil
  • 200 gm tofu
  • 1 tbsp soy sauce
  • 1 cup broccoli
  • 8 to 10 buttoned mushrooms
  • 2 tsp sesame seeds
  • 120 gm cooked brown rice


Heat olive oil in a skillet and sauté tofu until golden brown.

Add soy sauce and sauté for a minute.

Add broccoli, mushrooms, and more soy sauce. Sauté for a few minutes.

Sprinkle sesame seeds and serve over brown rice.

Zucchini Basil Noodles


2 zucchinis

2 tbsp olive oil

1 clove garlic

1 tomato

1/4th tsp chili flakes

Salt and pepper to taste

1 cup fresh basil


Spiralize the zucchinis.

Sauté spiralized zucchini in olive oil.

Add garlic and sliced tomatoes. Sauté for a minute.

Season with chili flakes, salt, and pepper. Add torn fresh basil and serve.

Italian Vegetable Minestrone Soup


2 tbsp olive oil

1 chopped onion

1 cubed carrot

Handful of celery

2 tbsp tomato paste

Salt and black pepper to taste

1 clove garlic

1 tsp oregano

1/4th tsp thyme

1 bay leaf

1/4th tsp chili flakes


Warm olive oil in a pot and add chopped onion, carrot, celery, and tomato paste. Cook for 7-10 minutes.

Add garlic, oregano, and thyme. Stir for 2 minutes.

Add salt, bay leaf, chili flakes, and black pepper. Serve hot.
