Jack fruit curry (vegan)

Except for the thorny skin, the entire jackfruit is edible. Check out the recipes for special thoran or stir fry using chakini or flimsy white strips, seeds, and rind, as well as the tasty crispy and spicy chips.

Jackfruit thoran
Ingredients

4 cups chakini or flimsy white strips (finely chopped)
1 cup jackfruit seeds (chopped)
¼ cup jackfruit rind (finely chopped)
Salt as required
1 tsp turmeric powder
2 cups grated coconut
1 tsp chili powder
4 garlic cloves
¼ tsp cumin seeds
2 sprigs curry leaves
2 dried chillies
¼ tsp mustard seeds
¼ tsp urad dal
2 tsp oil

Preparation
Cook the white strips, seeds, and rind with salt, turmeric powder, and water to taste.
Meanwhile, combine the grated coconut, garlic, cumin seeds, chilli powder, and a sprig of curry leaves in a blender.
Combine this mixture with the cooked jackfruit mixture.
Combine thoroughly.
In a skillet, heat the oil.
Spritz the mustard seeds and urad dal together.
Add a sprig of curry leaves and dried chilies if desired.
Roast until well browned. Stir this tempering into the jackfruit mixture.
Delicious jackfruit stir fry is ready.

Jackfruit – pepper chips
Ingredients
4 cups raw jackfruit bulbs (cut into thin strips)
Salt solution as required
¼ tsp pepper powder
Oil to fry
