Karikku choru, also known as tender coconut water rice, offers a delightful fusion of flavors by incorporating the subtle sweetness and unique aroma of tender coconut water into the classic basmati rice dish. This creative recipe provides a light and aromatic alternative to traditional rice preparations, perfect for complementing a variety of Indian curries, vegetarian dishes, or seafood delicacies.

To prepare this refreshing dish, begin by rinsing one cup of basmati rice under cold water until the water runs clear. In a saucepan, heat one tablespoon of coconut oil or ghee over medium heat and add aromatic spices such as cumin seeds, green cardamom pods, cloves, and a cinnamon stick. Sauté the spices until fragrant, then add the rinsed basmati rice to the saucepan and coat it with the spices and oil/ghee.

Next, pour in one and a half cups of tender coconut water along with half a cup of water, and add salt to taste. Stir the mixture well and bring it to a boil, then reduce the heat to low, cover the saucepan with a lid, and simmer for 15-20 minutes until the rice is cooked and all the liquid is absorbed. Once cooked, fluff the rice gently with a fork.

For added flavor and texture, heat ghee in a pan and sauté sliced shallots until they turn brown. Garnish the tender coconut water rice with the sautéed shallots before serving.
