Ingredients

¼ cup powdered oats

4 tablespoons water

Salt (as required)

2 eggs

1 shredded carrot

½ diced onion (savala)

½ diced tomato

2 green chilis (cut into small, thin round pieces)

Curry leaves (as required)

1 small piece of diced ginger

½ teaspoon ground pepper

¼ teaspoon turmeric powder½ teaspoon chili flakes

1 tablespoon coconut oil

Preparation

Pour four tablespoons of water into the powdered oats, stir well.

Beat the eggs and add them along with all other ingredients to the oat mix. Mix thoroughly.

Heat one tablespoon of coconut oil in a pan. Pour the egg mixture into the pan and cook covered with a lid.

When one side is cooked, gently turn the omelette using a spatula and cook the other side.

Once fully cooked, slide the omelette onto a plate and serve hot.
