To prepare these festive cookies, start with the ingredients: semolina, sugar, ghee, coconut, all-purpose flour, eggs, cardamom powder, and baking powder. Begin by grinding the coconut with a bit of water to form a paste. Next, prepare a sugar syrup in a deep non-stick pan, then stir in the semolina and cook until thickened. Add the coconut paste, ghee, and salt, mixing well to combine, and cook until the mixture thickens. Let this cool overnight in the refrigerator.
The next day, take the mixture out and bring it to room temperature. Add egg yolks, cardamom powder, sifted flour, and baking powder. Beat the egg white until stiff peaks form, then fold it into the dough. Chill the mixture for 20 minutes, then shape it into small balls. Roll the dough into cutlet shapes and add design markings using a knife or fork.
Preheat the oven to 180°C and grease a baking tray with ghee. Arrange the bolinhas, ensuring they are spaced out. Bake them first with base heat for 15 minutes, then switch to top heat until they turn golden brown.
