
Ramassery Idli is a distinctive variant of the beloved South Indian dish, idli, originating from the small village of Ramassery, near Palakkad in Kerala. Known for its incredibly soft texture and larger, flatter shape, this idli has earned a place on India’s food map, becoming a must-try for food lovers. What sets it apart from regular idlis is its unique preparation method — the batter is steamed over a cloth placed on clay or earthen pots, giving it a special flavor and texture.
This soft, pancake-like idli offers a delightful combination of velvety smoothness with a subtle grainy aftertaste. According to Chef Rekha Raghavan, also known as ‘magicwithspice’ on Instagram, “Ramassery idli is flatter, larger, and much softer than regular idlis. It is steamed on a cloth over a clay pot, giving it a unique taste.”
The origins of Ramassery idli date back over 200 years when Mudaliar families migrated from Tamil Nadu to Kerala. While the men were skilled weavers, the women became known for their culinary expertise, and thus the tradition of Ramassery idli was born. Today, only a few families in Ramassery continue the legacy of preparing this idli, serving it alongside sambhar, coconut chutney, or spicy chilli chutney, making it a delectable experience.
