
Onam celebrations are synonymous with grand feasts, and no Onasadya is complete without a sweet finale. While traditional payasams such as ada pradhaman and parippu payasam hold a special place in the hearts of many, this year, why not try something unique? Dates payasam, with its rich, exotic flavors, offers a delightful twist to the usual desserts served during Onam.
Chef Rinu from Marriott’s Port Muziris Hotel shares his recipe for this unique treat. Dates are not only a nutritional powerhouse but also lend a natural sweetness that pairs beautifully with jaggery and coconut milk. Rich in essential vitamins and macronutrients, dates are available year-round, making this recipe easy to recreate at home.
Ingredients:
Dates (blended with water to make a paste)
Jaggery syrup
Coconut milk (first extract)
Cardamom powder
Cumin powder
Dried ginger powder
Cashews
Coconut shards
Sesame seeds
Ghee
Preparation:
Heat ghee in a pan and fry coconut shards, cashews, and sesame seeds. Set them aside.
In the same pan, add more ghee and sauté the blended dates paste until the water evaporates.
Add jaggery syrup and stir well.
Mix in the cardamom, dried ginger, and cumin powders.
Once the mixture reaches a one-string consistency, add the first extract of coconut milk.
Stir thoroughly and garnish with the fried coconut shards, cashews, and sesame seeds.
