
Neykottu Biryani is a cherished dish from the Malabar region of Kerala, renowned for its rich, meaty flavors and the unique depth added by bone marrow. Unlike the more common biryanis made with fragrant basmati rice, Neykottu Biryani incorporates locally grown varieties such as ponni, kuruva, or matta rice, offering a distinct texture and taste. This biryani is slow-cooked with tender buffalo leg pieces, aromatic spices, and a hint of coconut oil, resulting in an irresistible dish that is both hearty and flavorful.
Ingredients
For the Biryani Masala:
1.5 kg buffalo leg (with bone marrow)
2 teaspoons coconut oil
2 onions, thinly sliced
2 green chilies, slit
1 teaspoon ginger-garlic paste
3 teaspoons coriander powder
2 tomatoes, finely chopped
½ teaspoon turmeric powder
½ teaspoon pepper powder
1 teaspoon garam masala
Salt to taste
Fresh curry leaves
Fresh coriander leaves
For the Rice:
2 cups ponni, kuruva, or matta rice
3 teaspoons coconut oil
1 teaspoon fennel seeds
¼ teaspoon turmeric powder
1 teaspoon ghee
Fresh curry leaves
Fresh coriander leaves
Salt to taste
Preparation
Cooking the Bone Marrow Masala:
- Heat coconut oil in a pressure cooker over medium heat.
- Add the sliced onions and sauté until golden brown.
- Stir in the chopped tomatoes, green chilies, and ginger-garlic paste, cooking until the raw aroma disappears.
- Add coriander powder, turmeric powder, and salt, mixing well to combine.
- Add the buffalo leg pieces, coating them thoroughly with the spice mixture.
- Pour in ½ cup of water, close the lid, and pressure cook for about 20 minutes.
- Let the pressure release naturally before opening the cooker.
- Return the pot to medium heat, then add pepper powder, garam masala, fresh curry leaves, and coriander leaves.
- Let the mixture simmer until the gravy thickens and the marrow releases its rich flavors.
Preparing the Rice:
- Rinse the rice thoroughly under running water until clear.
- Heat coconut oil in a large pot over medium heat and add fennel seeds.
- Add the rinsed rice and sauté for 2-3 minutes, ensuring it is well coated with oil.
- Pour in hot water, ensuring it covers the rice by about 2 inches. Add turmeric and salt.
- Bring to a boil, then reduce the heat, cover, and cook until the rice is 80% done (about 10-12 minutes).
Assembling the Biryani:
- If using an oven, preheat it to 180°C (350°F).
- In a heavy-bottomed pot, layer half of the partially cooked rice.
- Spread the bone marrow masala evenly over the rice layer.
- Cover with the remaining rice, forming a uniform layer.
- Drizzle ghee over the top and garnish with fresh curry leaves and coriander leaves.
- If baking, cover the pot with a tight-fitting lid or foil and bake for 15 minutes.
- If cooking on the stovetop, cover and cook on low heat for 15 minutes.
- Let the biryani rest for 5 minutes before gently fluffing it with a fork.

Neykottu Biryani is best served hot with a side of cooling raita, spicy pickle, or a crisp fresh salad. The rich, marrow-infused gravy blends perfectly with the rice, making every bite a celebration of Malabar’s traditional flavors.
