Traditional Vishu Kani Appam Recipe: A Sweet Start to the New Year

Kani Appam is a beloved traditional snack prepared especially during the festival of Vishu in Kerala. This sweet treat is an integral part of the ‘kani’ arrangement placed before the deity and later shared among children and family members. Though often compared to unniyappam in terms of flavor and appearance, kani appam holds a unique charm rooted in its festival significance and homemade authenticity. Its main ingredients include rice, jaggery, bananas, and aromatic spices — all of which come together to create a deliciously soft and golden-brown treat.

To prepare this festive delight, start by washing and soaking raw rice for a couple of hours. Once soaked, drain the rice thoroughly and let it dry on a clean cloth. Once dry, grind the rice into a fine flour along with cardamom pods for added aroma. Separately, melt jaggery in a bit of water to make a syrup and mash ripe bananas to a smooth paste. Combine the rice flour, banana puree, jaggery syrup, a pinch of salt, and baking soda to form a thick batter. Meanwhile, roast coconut shards in ghee until they start to turn golden, then mix in fennel seeds and black sesame seeds. Once this mixture cools, fold it into the batter and let it rest for a couple of hours to enhance the flavors.

When ready to cook, heat ghee or coconut oil in a traditional unniyappam mould. Pour a spoonful of batter into each mould cavity, allowing them to cook and puff up. Once the bottoms are browned, gently flip each appam and cook the other side until evenly golden. The end result is a batch of warm, soft kani appams with crispy edges and a rich, sweet aroma that perfectly complements the spirit of Vishu. Serve them fresh as part of the kani offering or enjoy as a festive snack with family — either way, it’s sure to bring joy to your Vishu celebration.
