How to Prepare Kerala-Style Ulli Theeyal

Ingredients:

  • For the curry:

    • 1 cup pearl onions
    • ½ tbsp seedless tamarind
    • 1 cup hot water
    • ¼ tsp jaggery
    • Salt to taste
  • For the spice paste:

    • ½ cup grated coconut
    • ½ tbsp coriander seeds
    • ½ tsp cumin seeds
    • 15 black peppercorns
    • 2 dry red chilies
    • ½ cup water
  • For tempering:

    • 2 tsp coconut oil
    • ½ tsp mustard seeds
    • 1 dry red chili
    • 7-8 curry leaves

Method:

  1. Soak pearl onions in water for 20-30 minutes to make peeling easier. Simultaneously, soak tamarind in hot water for 30 minutes.
  2. Peel and rinse the onions. If the onions are large, cut them in half. Extract the tamarind pulp and keep it aside.
  3. To prepare the spice paste, heat coconut oil in a pan and roast coriander seeds, cumin seeds, methi seeds, black pepper, and dry red chilies on low flame until aromatic.
  4. Add grated coconut and continue roasting until golden brown. Allow it to cool, then grind with water to make a smooth paste.
  5. Heat coconut oil in a pan, sauté the pearl onions until they are slightly browned, then add turmeric powder.
  6. Pour in the tamarind pulp, followed by the prepared spice paste and water. Season with salt and jaggery, then let it simmer for 10 minutes.
  7. Prepare the tempering by heating coconut oil, adding mustard seeds, curry leaves, and a dry red chili. Once fragrant, pour it over the curry.
  8. Cover the pan and let the flavors meld before serving.
